With an evolving list of core and specialty beers, a robust barrel aging program, two state-of-the-art brewing systems at our disposal (30 BBL and 15 BBL) and a 200 CPM canning line brought online in 2023, we are committed to experimentation, innovation, consistency and quality.

The Head Brewer + Production Manager position at Thin Man is the focal point and leader of our entire program, developing processes and functions to ensure we stay true to our commitment to quality and innovation. As head of our production team at both sites, this person’s responsibility will be to ensure the production and development of our portfolio, the management and growth of our production teams, maintaining high safety standards and leadership through our expansion into our new packaging plant. in 2023. This role will operate from our Chandler Street and Elmwood Avenue locations in Buffalo, New York. Applicant will be expected to live in the Western New York area.


  • 5-10 years of commercial brewing experience, with a minimum of 2-3 years of brewery operations management experience leading a production brewery of 13,000 barrels per year (or more) production
  • A bachelor’s degree in brewing/fermentation/engineering is preferred, but applicable experience and resume will also be considered. A graduate degree applicable to our field will be considered a bonus
  • The candidate must have a deep understanding of the science of our industry, from grain to glass and everything in between
  • The candidate should have a strong background in leading a team of employees in a production brewery – we value our production team greatly and effectively leading these teams is as important as building and managing our portfolio of beers
  • Candidate must have experience sourcing ingredients for large-scale brewery operations and specialty programming
  • The candidate must have experience with mechanical brewing systems and the ability to troubleshoot with their production team to ensure safe operation and maintenance
  • Candidate must have a collaborative work ethic and excellent interpersonal skills to ensure a positive and successful working relationship with ownership, production, sales and dining room staff
  • Candidate must have strong organizational and technological skills, including knowledge of brewing and financial software


  • Ensures that the quality, consistency and safety of our beer production remains paramount
  • Develops a culture of responsibility, growth and empowerment for our production team
  • Ensure that all mechanical systems are maintained to the highest standards of safety and efficiency
  • Ensures the success of our expansion into our new space in 2023, with an intimate knowledge of our new canning line and the development of the space for maximum efficiency for production and storage operations (in concert with our manager warehouse)
  • Works closely with our sales team to ensure packaging materials and shipping schedules continue without disruption to production and sales
  • Develop forecast SOPs with our sales team
  • Work closely with the Warehouse Manager to ensure that both production floors are clean, inviting and safe spaces for our production teams, collaboration colleagues, sales staff and customers
  • Ensures that all members of the production team have the tools and knowledge necessary to be successful in their work
  • Develops equipment maintenance and optimization SOPs for production teams to ensure the most efficient mechanical systems possible
  • Develops schedules for members of the production team
  • Ensures that resource management remains paramount in order to reduce process losses (yield/yeast propagation/fermentation/water management)
  • Develops brewing schedules that allow sales and marketing to develop the ancillary materials necessary to ensure the success of each beer in the tank
  • Works closely with sales and marketing to drive innovation, manage portfolio and ensure wholesale and faucet distribution success
  • Maintains a level of cooperation, collaboration and respect when interacting with everyone in our organization, from the sales manager to our part-time valve room maintenance staff
